Aquila Saffron DOP: history, territory and flavor of Abruzzo’s red gold

Origin and curiosities

  • Aquila Saffron obtained its Protected Designation of Origin (DOP) status with EC Regulation 205/2005 on February 4, 2005.
  • The designated cultivation area covers 13 municipalities in L’Aquila province: Barisciano, Caporciano, Fagnano Alto, Fontecchio, L’Aquila, Molina Aterno, Navelli, Poggio Picenze, Prata d’Ansidonia, San Demetrio nei Vestini, San Pio delle Camere, Tione degli Abruzzi, Villa Sant’Angelo.
  • Cultivation is done at elevations between 350 and 1000 meters above sea level, in soils rich in active limestone, good aeration, and subject to marked day-night temperature swings — ideal for saffron.

What to see / taste

  • Visits to saffron fields in Navelli’s territory in autumn to witness flowering and early-morning harvesting.
  • Traditional processing: manual removal of threads (stigmas), wood-fired drying (using almond or oak wood), artisanal methods that enhance aroma, color and flavor.
  • Taste local products: saffron threads or powder, used in regional recipes and also desserts, liqueurs, during cookings shows and gastronomic events.

  • Harvesting time: from mid-October to the first week of November, harvesting in mornings before flower opening to preserve quality.
  • Best visit times: during saffron festivals, gastronomy events, and cultural celebrations in the producing municipalities, especially Navelli.

  • Access the Navelli Plateau via road from the city of L’Aquila; local roads lead through scenic countryside. Saffron is sold by local producers and cooperatives, and by online stores of the Consorzio.
  • “Le vie dello Zafferano” events allow visitors to pick flowers, learn about the tradition, and taste saffron-based dishes.
