In the heart of Abruzzo, under the shadows of the Gran Sasso and among the villages of the Navelli Plateau, grows one of the region’s most iconic products: Aquila Saffron DOP. A culinary and cultural gem that embodies centuries of care, craftsmanship, and terroir, now shining as a symbol of identity and opportunity for rural communities.
Origin and curiosities
- Aquila Saffron obtained its Protected Designation of Origin (DOP) status with EC Regulation 205/2005 on February 4, 2005.
- The designated cultivation area covers 13 municipalities in L’Aquila province: Barisciano, Caporciano, Fagnano Alto, Fontecchio, L’Aquila, Molina Aterno, Navelli, Poggio Picenze, Prata d’Ansidonia, San Demetrio nei Vestini, San Pio delle Camere, Tione degli Abruzzi, Villa Sant’Angelo.
- Cultivation is done at elevations between 350 and 1000 meters above sea level, in soils rich in active limestone, good aeration, and subject to marked day-night temperature swings — ideal for saffron.
What to see / taste
- Visits to saffron fields in Navelli’s territory in autumn to witness flowering and early-morning harvesting.
- Traditional processing: manual removal of threads (stigmas), wood-fired drying (using almond or oak wood), artisanal methods that enhance aroma, color and flavor.
- Taste local products: saffron threads or powder, used in regional recipes and also desserts, liqueurs, during cookings shows and gastronomic events.
When to visit / harvest period
- Harvesting time: from mid-October to the first week of November, harvesting in mornings before flower opening to preserve quality.
- Best visit times: during saffron festivals, gastronomy events, and cultural celebrations in the producing municipalities, especially Navelli.
How to reach / where to find it
- Access the Navelli Plateau via road from the city of L’Aquila; local roads lead through scenic countryside. Saffron is sold by local producers and cooperatives, and by online stores of the Consorzio.
- “Le vie dello Zafferano” events allow visitors to pick flowers, learn about the tradition, and taste saffron-based dishes.
Why visit it / why choose it
- Aquila Saffron DOP embodies tradition, local identity, and artisan craftsmanship: every step, from cultivation to drying and storage, is carried out with strict attention to detail.
- It also represents an economic and tourism opportunity for the internal areas, uplifting local heritage, community, and gastronomy.
- And quality: few spices offer such intense color, persistent aroma, and distinctive flavor — making local saffron a sensory experience not to be missed.
